By targeting a few useful moments — booking or ordering, quality of the meal, service and resolution of an incident — then combining short questionnaires, spontaneous feedback and public reviews. The key is to link each signal to the restaurant, the channel and the manager able to act: a chain-wide average does not tell a restaurant manager why Saturday evenings are slipping.
A short check-in during the stay detects incidents that can still be fixed: a few questions sent at the right moment, or a QR code available on site — by the pool, in the washrooms, on a table. It complements a broader post-stay survey, complaints and public reviews. Results must be readable by step, by department and by site, so that each team sees what concerns it.
